1.3 lbs (600 g) potatoes
1 tbsp olive oil
salt & black pepper, to taste
½ cucumber, chopped
½ red bell pepper, chopped
1 red onion, diced
2 tbsp dill, chopped

Instructions

  • Preheat the oven to 350°F (180°C).
  • Boil the potatoes, then drain them, place on a tray, and mash them. Add some olive oil and season with salt and pepper. Bake in the oven for about 20 minutes.
  • Place all the ingredients for the dressing into a large bowl and mix well to combine. Add the remaining salad vegetables, along with the baked potatoes, and serve immediately.
