Sweet Potato Wraps with Spicy Guacamole

Ingredients
1 sweet potato, peeled
2 carrots, peeled
2 tbsp olive oil
salt & black pepper, to taste
½ avocado
2 tomatoes, chopped
1 red onion, half diced, half sliced
½ chili pepper, deseeded, diced
4 tbsp cilantro, chopped
½ lime, juiced
2 Quinoa Spinach Tortillas
handful of lettuce
2 oz (60 g) vegan feta

Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with baking paper.
- Cut the sweet potatoes and carrots into batons and place on the lined baking sheet. Drizzle with olive oil and season with salt and pepper. Place in the hot oven to bake for about 20 minutes.
- Place the avocado flesh in a bowl and mash with a fork. Mix in the diced onion, chili, and cilantro. Add the lime juice and season to taste with salt and pepper.
- To serve, heat the tortillas, then spread with the guacamole. Top each tortilla with the baked sweet potato and carrot, then add the lettuce, tomato, sliced onion, and crumbled feta.
