Spinach & Yogurt Dip

Ingredients

1 clove garlic, crushed
7 oz (200 g) spinach
2 tbsp extra virgin olive oil
1 cup (285 g) Greek yogurt
1 tsp dried dill
2 tbsp pine nuts, toasted
salt and pepper, to taste

Instructions

  • Place small pan over medium heat with dash of olive oil. Add crushed garlic and spinach. Cook until wilted and soft, then transfer to bowl to let cool. Toast pine nuts in pan, moving them around frequently to prevent burning.
  • Once spinach has cooled, add yogurt and dill, season to taste with salt and pepper, and mix well.
  • Top with toasted pine nuts and serve.
