Mushroom Burger with Tofu Fries

Ingredients

For the tofu fries:
  12 oz (350 g) extra firm tofu, pressed, drained
  1 tbsp sesame oil
  1⁄2 tbsp avocado oil
  2 tbsp soy sauce
  1⁄4 tsp chili flakes
  2 tsp cornflour
For the portobello mushrooms:
  4 large portobello mushrooms
  4 tbsp balsamic vinegar
  2 tbsp olive oil
  1 tbsp steak spice seasoning
For the burgers:
  4 burger buns
  1 head lettuce
  2 tomatoes
  1⁄2 red onion
  burger condiments of choice (mayo, mustard, and/or ketchup)

Instructions

  • Preheat oven to 350°F (180°C).
  • Rinse mushrooms and pat dry with paper towels. Remove stems and place caps in plastic bag with balsamic vinegar, olive oil, and steak seasoning. Shake to coat and marinate for at least 5 minutes.
  • Cut tofu into small, french fry-sized strips and set aside. In small bowl, whisk together sesame oil, avocado oil, soy sauce, and chili flakes. In large bowl, pour cornflour and toss tofu fries to coat. Pour soy and sesame sauce over fries and gently mix. Place tofu fries onto lined baking sheet and bake for 20 minutes.
  • Heat grill to medium-high. Place mushrooms onto BBQ or cast iron grill plate and cook for approximately 3 minutes each side, turning once, until mushrooms are cooked through.
  • Wash and separate lettuce. Slice tomatoes and red onion into thin slices. To assemble burgers, place mushroom and toppings of choice onto bun and serve immediately with the tofu fries.
