Vegan Broccoli & Potato Burgers

Ingredients
8.1 oz (230 g) potato, peeled, thinly sliced
9.9 oz (280 g) broccoli, cut into florets
2 oz (55 g) mixed nuts
1 oz (30 g) chickpea flour
0.7 oz (20 g) breadcrumbs
1 oz (30 g) rolled oats
salt & black pepper, to taste
1 tbsp olive oil

Instructions
- Steam or cook the potatoes and broccoli, then set aside and reserve 2 fl oz (60 ml) of the cooking water.
- In food processor, add the nuts and blitz for 10 seconds. Leave the ground nuts inside the blender.
- In a small bowl, mix the chickpea flour with 2 fl oz (60 ml) of the reserved cooking water until well combined.
- Add the flour/water mixture, half of the cooked broccoli, half of the potato, breadcrumbs, rolled oats, salt, and pepper to the blender. Blend again for 5 seconds.
- Add the remaining broccoli and potato, stirring with a spatula to combine.
- Form the mixture into balls, then gently flatten into burger shapes. The size of the burgers can vary based on preference. This recipe should yield about 10 burgers.
- Cook the burgers in a non-stick skillet with a splash of olive oil over medium heat until browned on both sides.
