Instructions
- Using vegetable peeler, peel lemon into wide strips and place in medium-sized pot. Add water, grated ginger, and salt. Bring to a boil over high heat.
- Once boiling, reduce heat to medium-low and add quinoa and steel-cut oats. Cover pan with lid and simmer for 20 to 25 minutes.
- In the meantime, cut peeled lemon in half. Once quinoa and oats have cooked, squeeze in lemon juice (around 2 to 3 tablespoons). Remove lemon peel and serve with desired toppings, or store in airtight container in refrigerator for up to 5 days.
