Ingredients

For the grains:
  1 lemon
  6 cups (1.4 L) water
  2 tbsp root ginger, grated
  1 tsp salt
  1cup (190 g) dried quinoa, rinsed
  2 cups (160 g) steel-cut oats
Savory serving suggestions (optional):
  roasted tomatoes
  sauteed spinach
  poached egg
  avocado
Sweet serving suggestions (optional):
  yogurt
  honey
  mango
  berries

Instructions

  • Using vegetable peeler, peel lemon into wide strips and place in medium-sized pot. Add water, grated ginger, and salt. Bring to a boil over high heat.
  • Once boiling, reduce heat to medium-low and add quinoa and steel-cut oats. Cover pan with lid and simmer for 20 to 25 minutes.
  • In the meantime, cut peeled lemon in half. Once quinoa and oats have cooked, squeeze in lemon juice (around 2 to 3 tablespoons). Remove lemon peel and serve with desired toppings, or store in airtight container in refrigerator for up to 5 days.
