Apple Crumble Banana Bread

Ingredients
3 ripe bananas, mashed
8 tbsp coconut oil, melted
4.2 oz (120 g) maple syrup
1 flaxseed egg (combine 1 tbsp flax meal + 3 tbsp warm water)
1 apple, chopped into small pieces
8.8 oz (250 g) all-purpose flour
3 tsp baking powder
½ tsp baking soda
2 tsp ground cinnamon

Instructions
- Preheat the oven to 355°F (180°C). Grease a loaf tin or line with baking paper.
- In a large bowl, combine the mashed bananas, coconut oil, maple syrup, and flaxseed egg. Then stir in the chopped apple.
- Add flour, baking powder, baking soda, and cinnamon to the wet ingredients. Mix until well combined.
- In a separate bowl, mix together the rolled oats, vegan butter, and flaked almonds to create a crumbly topping.
- Pour the banana bread batter into the greased loaf tin and evenly sprinkle the crumble over the top.
- Place into the hot oven and bake for 45 to 55 minutes or until a toothpick inserted into the center comes out clean.
- Set aside to cool completely on a wire rack.
