Chunky Monkey Pancakes

Ingredients

1 tsp coconut oil
1 tbsp dark chocolate, chips or grated
For the pancakes:
  ¼ cup(70 g) plain Greek yogurt
  ½ cup(45 g) rolled oats
  ½tsp baking powder
  ½ medium banana, mashed
  2 egg whites
  2 tbsp unsweetened almond milk
  1 tsp vanilla extract
For the sauce:
  1 tbsp peanut butter
  ½ medium banana
  2 tbsp unsweetened almond milk

Instructions

  • Add all pancake ingredients to food processor or blender and process until smooth.
  • Heat non-stick frying pan or skillet over medium heat and coat with a little coconut oil.
  • Use ladle to spoon pancake batter into pan. Cook until bubbles start appearing on pancake surface (about 3 minutes). Flip pancake and cook for 2 minutes. Repeat process with remaining batter, continuing to coat pan with coconut oil as needed.
  • Prepare sauce by mashing banana in small bowl and combining with peanut butter. Add splash of almond milk and stir to reach desired consistency.
  • Pour sauce over pancakes and sprinkle chocolate chips.
