Lebanese Spice Rice

Ingredients

1 tbsp dairy free butter
2 tbsp olive oil
1.8 oz (50 g) pine nuts
1.8 oz (50 g) cashew nuts
1.8 oz (50 g) almonds
1 medium onion, finely diced
10.6 oz (300 g) basmati rice
1 ½ tbsp Lebanese spice
½ tsp ground cinnamon
1 ½ tsp salt
½ tsp cracked black pepper
1.1 pt (540 ml) water
10.6 oz (300 g) mixed frozen green peas, corn, and diced carrot

Instructions

  • Melt the dairy-free butter and olive oil in a pot over medium-high heat. Add the pine nuts, cashew nuts, and almonds; brown gently; then remove from the pot and set aside.
  • In the same pot, sauté the onion until soft. Then add the rice, spices, and salt, stirring until well coated in oil. Add the water and vegetables and stir to combine.
  • Bring the water to a boil, then reduce the heat to low and cook for 10 minutes with the lid on. Turn off the heat and set the pot aside to sit for 5 minutes.
  • Serve the rice with the nuts on top.
