Ingredients

5.3 oz (150 g) rolled oats
1 pt (450 ml) boiling water
2 tsp vanilla extract
7.6 fl oz (225 ml) unsweetened almond milk (plus extra to serve, optional)
1 large ripe banana, peeled
6.5 oz (185 g) frozen mixed berries
2 tbsp toasted flaked almonds
1 tsp maple syrup (optional)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a heatproof bowl, combine the rolled oats with the boiling water, vanilla extract, and almond milk.
  • Mash the banana and spread it over the base of a medium-sized baking dish. Stir in frozen berries and maple syrup (if using).
  • Pour the oat mixture over the fruit and sprinkle over the toasted flaked almonds.
  • Place the dish into the hot oven. Bake for 30 to 40 minutes until set and the fruit juices are bubbling around the edges.
  • Serve the baked oats with a splash of extra almond milk if desired.
