Spicy Pork Stir Fry

Ingredients

1 ½ tbsp olive oil
2 onions, sliced
1 small eggplant, diced
1.1 lbs (500 g) lean pork filet, sliced
2 red bell peppers, seeded, cut into strips
3 tbsp mild curry powder
14 oz (400 g) can plum tomatoes
5 fl oz (150 ml) water
salt & pepper, to taste
1.3 lbs (600 g) cooked basmati rice, to serve
cilantro, chopped, to serve

Instructions

  • Heat the olive oil in a large non-stick skillet. Add the onions and eggplant and cook for 8 minutes until soft.
  • Add the pork and sauté for 5 minutes until it starts to brown. Then stir in the bell peppers and cook for 3 minutes until soft.
  • Sprinkle over the curry powder and stir for a minute. Pour in the tomatoes and water and stir together. Then cover and simmer gently for 5 minutes.
  • Season with salt and pepper and serve with basmati rice topped with chopped cilantro.
