Spicy Peanut Noodle Stir Fry

Ingredients
9 oz (250 g) whole wheat or soba noodles
1 tbsp sesame oil
7 oz (200 g) tender stem broccoli
7 oz (200 g) mushrooms, sliced
1 red bell pepper, sliced
4 green onions (spring onions), sliced
fresh cilantro (coriander), optional
For the sauce:
6 tbsp tamari or soy sauce
½ cup (120 g) peanut butter
2 tbsp sriracha sauce
1 tbsp toasted sesame oil

Instructions
- Cook noodles according to package instructions.
- Heat sesame oil in large skillet or frying pan. Stir-fry vegetables and cilantro for 6 to 8 minutes, until tender.
- Meanwhile, in bowl, combine all sauce ingredients with whisk until thick and smooth. Add splash of hot water when mixing, if necessary.
- Add cooked noodles and sauce to skillet with vegetables. Stir well to coat everything in sauce.
- This dish can be served hot or cold.
